Zucchini Mock Apple Pie

1 pie crust, unbaked
5 c. sliced zucchini, peeled and remove seeds
3/4 c. sugar
1 tsp. cinnamon
1/4 c. real lemon juice
3/4 c. water


Crumb Topping
1 c. flour
1/2 c. brown sugar
6 tbsp. butter, butter
1/4 tsp. salt

Bring to boil zucchini, sugar, cinnamon, lemon juice, and water; simmer until soft. Pour into an unbaked pie shell; pat crumb topping over mock apples and bake at 325 degrees for 25 minutes.

Carolyn's Zucchini Chocolate Chip Cookies

Cream together:
1/2 C margarine
1 C sugar
1 egg

Mix dry ingredients:
2 C flour
1/2 tsp salt
1 tsp baking soda
1 tsp cinnamon
1/2 tsp cloves

Mix wet and dry ingredients.
Add:
1 C zucchini
Add:
Chocolate chips, raisins, or nuts.

Form cookies on greased baking sheet.
Bake at 350 degrees for 12-15 minutes.

Grandma Martineau's Zucchini Chocolate Cake

Cream together:
1/2 C oil
1/2 C soft margarine
1 3/4 C sugar

Add to this:
3 eggs
1 tsp vanilla
1/2 C buttermilk or sour cream

Beat well.

Combine the following dry ingredients:
1/4 C cocoa powder
1/2 tsp cloves
1/2 tsp cinnamon
1/2 tsp baking powder
1 tsp baking soda
2 1/2 C flour

Mix wet and dry ingredients.
Add:
2 C zucchini
(Optional) chopped nuts

Pour batter into greased pans.
Sprinkle 6oz of chocolate chips on top.

Bake in pre-heated oven at 350 degrees for 30-35 minutes or until toothpick inserted in center comes out clean.
Allow time to cool before removing from pans.

Adventure Beyond Hardware Ranch

Saturday night we had a picnic up Blacksmith Fork Canyon. Autumn liked the "swing-slide." We kept driving up the canyon until we got to the Johnson Ranch which was in a lovely mountain valley. We were only 9 miles from Laketown near Bear Lake. Jonathan took this picture of a doe and her two fawns.

Zucchini anyone?

This is one day's harvest of zucchini from our garden.
Autumn helped make zucchini bread. We've made 8 large loaves in the past week and also grated and frozen as much.

My new favorite scripture

OK, this may be a little cheesy to some of you. But I haven't had a new favorite scripture in years. Our Young Women group is reading the Book of Mormon (531 pages) in 100 days. Last night I read Mosiah 16. It was the end of the day so I was tired and just reading to catch up. I came across this verse (9) and it popped out at me. It also seemed like I'd never read it before and the visual that came with it really hit home with me.



It's talking about Jesus Christ and it says "He is the light and the life of the world; yea, a light that is endless, that can never be darkened; and also a life which is endless, that there can be no more death."


"A light that is endless" reminds me of something that you can depend on, something that's permanent, and something that reaches out forever and ever like the light from a star. I'm not trying to be preachy, I just thought I'd let you all know that I had found something that makes me happy to think about. If you want more background on this verse, it's Abinadi the prophet speaking just before the evil king puts him to death. It is the climax of his sermon, all of which I've come to really appreciate and love this time reading through.
